How to make the perfect Derby pie

Winter is finally getting over with and spring is rolling in! When spring comes to Kentucky, that means it’s about that time to go to Keenland and start watching the horses race. And if you love watching horses race, then you probably also love Derby Day!  My family and I make a traditional pie for Derby Day, and now you can too! Check out the following recipe…

Ingredients:

1 c. chopped nuts

2 eggs slightly beaten

1 c. sugar

1 stick butter

1/2 c. all-purpose flour

1 tsp. vanilla

1 c. chocolate chips

 Unbaked pie shell

Directions:

Step 1: Melt butter in microwave for 1 min (per stick), then let it cool for about five minutes

Step 2: In a bowl add sugar, flour, eggs, vanilla and chopped nuts (walnuts or pecans) 

Step 3: When mixture is no longer warm (from butter being in microwave), add the chocolate chips (if you add the chips too early they will melt and the pie will not turn out right)

Step 4: Pour into unbaked pie shell

Step 5: Bake at 350 for about 40-45 minutes, until set (you may have to cover the crust or top of pie with foil to prevent getting too dark

Step 6: Enjoy it!
